Our Cuban Black Bean and Rice Soup Mix is a convenient, quick-cooking blend featuring dried black beans, long-grain rice, and dried vegetables like red bell peppers and garlic. Offering an authentic, savory, and mildly spicy flavor profile, often seasoned with cumin, chili pepper, oregano, and cinnamon for a hearty meal.
You will need:
6 cups water
2 tbsp olive oil
1 medium onion, diced
1 garlic clove, minced
1-1/2 cups diced tomatoes
1 lb cooked chicken, diced (optional)
Directions: Add entire contents of the package to 6 cups of boiling water. Reduce heat, cover and simmer for 25 minutes. In a separate frying pan, saute diced onion and garlic in olive oil until translucent. Set aside. After 25 minutes, add diced tomatoes, cooked chicken (optional) and the onion/garlic mixture to the soup pot. Bring to boil. Immediately reduce to low heat. Cover and simmer for 20 minutes, stir occasionally.
